If you ever dreamed about traveling to two different countries on two different continents in a single day, then you’re in luck, because we’re headed to both Poland and Colombia during our next food experience. That’s right, POLOMBIA, a new Chicago restaurant blends the best Polish and Colombian street foods to create incredible tasting cross-cultural cuisine that our Crew is excited to eat, travel, and explore.

POLOMBIA is a partnership of two food service professionals that share a common passion for innovation and growth. 𝗖𝘆𝗻𝘁𝗵𝗶𝗮 𝗢𝗿𝗼𝗯𝗶𝗼 and 𝗣𝗵𝗶𝗹𝗹𝗶𝗽𝗲 𝗦𝗼𝗯𝗼𝗻. Cynthia is a first generation Colombian-American and a registered dietician and Phillipe developed a love of cooking at age 11 by watching his celebrity crush, Rachael Ray. Cynthia introduces her love for international travel by sharing healthy, delicious global food options. Phillipe’s grandma taught him the Polish language and traditional cooking and his culinary talents knows no bounds. The couple has created unique tastes by successfully merging two completely different cultures into a single harmonious menu.

This modern and creative fare was briefly introduced to the public in Sept 2020 and hospitality veteran, 𝘈𝘯𝘯𝘢 𝘒𝘢𝘮𝘪𝘭𝘪𝘴, recognized POLOMBIA’s potential and graciously offered them a weekend home at 𝘛𝘩𝘦 𝘖𝘶𝘵𝘱𝘰𝘴𝘵 𝘔𝘦𝘹𝘪𝘤𝘢𝘯 𝘌𝘢𝘵𝘦𝘳𝘺. The restaurant has been receiving a lot of buzz since then and we can’t wait chow down on this new combination of street food.
